Patisapta (pancake with coconut stuffing) (Indian sweet)

Ingredients: (for stuffing)

  • 4-5 cups coconut (grated)
  • 200 gm Jaggery
  • 100 gm Khoya kheer
  • 1-2 cardamom (ground)

Ingredients: (for pancake)

  • 200 gm Rice powder
  • 50 gm Suji (semolina)
  • 100 gm sugar
  • 2-3 cups of water (luke warm)
  • 1/2 cup of grated coconut (for garnishing) (optional)

Stuff making:

  1. Heat the pan and give the jaggery in a pan.
  2. When jaggery becomes molten add grated coconut & mix well.
  3. Stir it continuously in a low flame, otherwise it will be overcooked and will taste bitter.
  4. When the mixture becomes thick & sticky, add khoya kheer & cardamom and mix it well.
  5. Keep the mixture in a glass bowl . 

Pancake Making:

  1. Take a big bowl and mix the rice powder, suji & sugar.
  2. Make a thick batter and keep aside.
  3. Heat the frying pan, give the 2-3 tablespoonful of batter.
  4. Spread it in a even circle with the back of a spoon. 
  5. When the pancake becomes half cooked, put the coconut mixture and fold the pancake longitudinally.
  6. Prepare each pancake with coconut mixture and keep aside.
  7. Patisapta is ready, garnish with grated coconut and serve it.
